There is a local restaurant that sells an amazing breakfast panini and this is my way of recreating it. The combination is amazing- and yet mine still didn't compare to the restaurants it is on it's way.
1slice of whole wheat toast
Handful of spinach
2 seasoned scrambled eggs
3-4 artichoke hearts
sliced/shredded cheese of choice
Layer in order and enjoy!
I also covered mine with a wet paper towel and put it in the microwave for about 30 seconds.
I tend to cook on the healthier side with a splurge every so often (depending on my mood). I am grateful for my knowledge of health and my taste buds for the scrumptious. It is an everyday battle between the two, but I have found a compromise that I am happy with.
